Ingredients
35ml Hepple Gin
15ml 3yr old Somerset Cider Brandy (Or young Calvados)
15ml Quince Syrup (see quince recipe)
20ml Freshly squeezed lemon juice
10ml Egg white
Method
Pour all the ingredients in a shaker and shake hard without any ice.
Then add plenty of ice and shake again.
Strain into a chilled cocktail glass.
Garnish with an apple fan.
